Seven-Layer Cookie Bars, dream bars, magic bars: these are all spin-offs of the same decadently gooey, cookie-crusted treat that we all recognize in one form or another. They're the perfect make-ahead dessert for your next party or potluck gathering.


How to Make Seven-layered Cookie Bars

We start with the foundation...the crust. Graham cracker crumbs are normally used for the bottom crust. Gingersnaps or vanilla wafers can also be used for the crust. I've even used breakfast cereal like cinnamon toast crunch in a pinch.

The layering of what will be the gooey delight of the cookie bar...chocolate chips, peanut butter chips, chocolate chunks, butterscotch chips, white chocolate chips, any type of chips that will melt can be used.

Shredded or Flaked Coconut? Whatever you desire works. I like shredded, I tend to like to bite into more chocolate than coconut. 

Which nuts are better for cookie bars? whatever is your favorite! My husband has a sensitivity to walnuts, so I use either pecans or almonds for cookie recipes. Toffee bits can be used to eliminate any nuts in the recipe. 

Sweetened condensed milk takes all these ingredients and helps bind them into a heavenly, sweet delightful cookie bar.

  • Combine graham cracker crumbs with butter, flatten into a baking dish
  • Drizzle some sweetened condensed milk (1/3 of the can) on the crust, I use a pastry brush to spread it evenly over the crust.

Layer your chips, coconut, nuts over the crust, then pour remaining sweeten condensed milk over the top, flatten down lightly with a fork. Place in preheated oven for about 25-30 minutes, or until outer edges are brown. Let cool down completely, if still a little too gooey, chill for about 15 minutes.

Ingredients:
  • 1 1/2 cups  Graham cracker crumbs or (12 whole crackers, finely crumbled)
  • 1 stick unsalted butter, melted
  • 1 cup of chocolate chips
  • 1 cup butterscotch chips
  • 1 cup shredded coconut 
  • 1 cup pecans, chopped
  • 1 can (14 oz.) sweetened condensed milk
Instructions:
  1. Blend graham cracker crumb with melted butter, and flatten onto the bottom of a parchment-lined baking dish (9x13-inch) or lightly greased baking dish.
  2. Drizzle some of the sweetened condensed milk evenly over the crust 
  3. Sprinkle with chocolate chips, butterscotch chips, nuts, and coconut flakes.
  4. Drizzle the remaining sweetened condensed milk evenly over the top.
  5. Bake at 350°F for 25-30 minutes, until it bubbles,  and edges brown. Cool, Chill if desired.
