Pecan Toffee Bar Cookies

Curl up with a hot cup of coffee, or hot chocolate, and one of these treats. A shortbread cookie layer gets topped with melted chocolate and sprinkled with pecans and toffee candy.



How to make Pecan Toffee Bars

Easy to make, three steps and you have delicious gooey cookie bars
  • Combine butter, flour, brown sugar, vanilla extract, and egg in a large mixer bowl. Beat at medium speed, scraping bowl often for 2 to 3 minutes or, until well mixed. Stir in 1/2 cup chocolate chips. 
  • Spread batter into an ungreased 13 x 9-inch baking pan.
  • Bake for 20 to 25 minutes or until golden brown. Immediately sprinkle with the remaining 1 cup morsels. Allow melting for 2 to 3 minutes. Spread chocolate over bars; sprinkle with toffee bits and pecans.

Ingredients:
  • 1/2 cup light brown sugar, firmly packed
  • 3/4 cup (1 1/2 sticks) salted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 1/2 cup semi-sweet chocolate chips (1/2 + 1 cup)
  • 1/2 cup English Toffee bits chips
  • 1/2 cup pecans, chopped
Instructions:
  1. Preheat oven to 350 degrees F
  2. Combine butter, flour, brown sugar, vanilla extract, and egg in a large mixer bowl. Beat at medium speed, scraping bowl often for 2 to 3 minutes or, until well mixed. Stir in 1/2 cup chocolate chips. Spread batter into ungreased 13 x 9-inch baking pan.
  3. Bake for 20  minutes or until golden brown. Immediately sprinkle with remaining 1 cup morsels. Allow to stand 2 to 3 minutes. Spread chocolate over bars; sprinkle with toffee bits and pecans. 
  4. Cool 1 hour on wire rack; cut into bars with a sharp knife while slightly warm.
