Quick & Easy Apple Crumb Cookie Bars


Apple Crumb Cookie Bars are super quick and simple to make. Apple slices stuffed between a  pie crust dough and soft, buttery, brown sugar and oatmeal topping.

This is a very quick and easy dessert that can be made, frozen, and just take a square or two, perfect for unexpected company, or afterschool snacks.

How to make Quick & Easy Apple Crumb Cookies

Cookie bottom:
Cut 18-21 two-inch circles out of your pie crust. 
Add pie circles to each cupcake liner in a muffin pan, or a greased muffin pan, then add one tablespoon of apple filling to each muffin well.

Cookie Filling:
Store-bought Apple pie filling, I cut some apple slices in halves to fit in the muffin tin.

Crumble Topping:
  • To make the crisp topping, add the flour, 1/2 cup sugar, 1/2 cup brown sugar, nuts, salt, oats, and butter to a bowl and combine with either a hand mixer or pastry cutter.
  • Add two tablespoons of the crumble topping on top of the filling. Bake 18-20 minutes.
  • Let cool completely for at least 20-30 minutes. If the cookie is still soft and crumbly, place it in the refrigerator for 15 minutes to firm up.
  • Optional: Drizzle caramel sauce over cookies.




    How to store Apple Crumb Bar Cookies

    Apple Crumb Bar cookies should be covered well with plastic wrap or stored in an airtight container. You can keep the bars at room temperature or you can store them in the refrigerator. At room temperature, cookies will last 3 days, in the refrigerator for about a week.

    Freezing Apple Crumb bar cookies is great for after school snacks and travel trips. I like to freeze them individually. Wrap each bar in plastic wrap and then add all of the bars to a freezer bag. This will protect the bars from getting freezer burn.
    Pull the cookie out of the freezer 30 minutes prior to eating.

    Optional: 
    Try mixing in a teaspoon of cinnamon to the crumble mixture.
    Drizzle caramel sauce on cookie bars after they cool.
    Use walnuts instead of pecans.

    Ingredients:
    • 1 pie crust
    • 1 can 20oz. Apple pie filling
    • 1 cup flour
    • 1/2 cup granulated sugar
    • 1/2 cup light brown sugar, packed
    • 2/3 cup old fashioned oats
    • 1/2 tsp salt
    • 1 stick + 2 tbsp unsalted butter, cold and diced
    • 1/4 cup pecans, chopped (optional)
    Instructions:
    1. Preheat oven to 350 degrees F
    2. Add cupcake liners to muffin pans, or grease muffin pans
    3. Cut 18-21 two-inch circles out of your pie crust.
