How to make Oatmeal Jam Filled Bars

  • In a medium bowl, combine, flour, oats, cinnamon, salt, and baking soda. In a large bowl, whisk slightly melted butter, brown sugar, and vanilla until well combined. Add dry ingredients and stir with the mixture until combined.

  • Pull out about 1 1/2 cups (a little less than half) of the cookie dough and set that portion aside (for topping). Drop the remaining dough into the prepared pan and press it down into a flat layer. Bake for 10 minutes.
  • Remove from the oven and carefully spread the jam on top of the cookie base. 
  • Take the reserved cookie dough and crumble it over the top of the jam layer. Return to the oven and bake for 14-16 more minutes, until the topping is light golden brown. Place the pan on a wire rack to cool.
  • Let cool for 30 minutes, then chill for 30 minutes or more to firm up.

Ingredients:
  • 2 cups Old-Fashioned Oats
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/4 tsp baking soda
  • 2 1/2 sticks (1 1/2 cups) unsalted butter, slightly melted
  • 1 cup brown sugar, soft
  • 1 tbsp vanilla extract
  • 1 1/2 cups (1 - 18oz jar) jam or preserves
Instructions:
  1. Preheat oven to 350°F. Line a 9" x 13" rectangular cake pan with foil or parchment paper.
